Ingredients

1 handful green beans, trimmed and halved

1 carrot, diced

1 onion, peeled & chopped into thin wedges

1 large zucchini, halved lengthwise & thickly sliced

1 bunch of bok choy, sliced (keep leaves & stems seperate)

2 cloves garlic, crushed
-
1 tbsp ginger, grated
-
1 Chilli flakes (optional)

¼ vegetable stock or broth
-
3 tbsp soy source or tamari
-
1 tsp cornflour
-
Sesame seeds to garnish

Olive oil
-
Rice or noodles to serve
Directions
In a bowl, whisk together vegetable stock and soy sauce.
Heat 1tbsp olive oil in a large frying pan over medium high heat. Add the carrots, onion, broccoli and firm ends of the bok choy and cook for 4-5 minutes.
Add the garlic, ginger, chilli flakes (if using) and a splash of the liquid and cook while stirring for 1 minute.
Mix the remaining liquid (stock & soy sauce) with cornflour until dissolved and add to the frying pan.
Cook for 1 more minute until the sauce has just thickened.
Serve immediately with rice or noodles.
Add chilli flakes to your liking, or leave out completely!
