Raspberry Lemon Chia Pudding

Add this zesty, sweet & nourishing pudding to your breakfast routine. Rich in fibre and Vitamin C, it’s a simple but delicious dish that can be meal prepped ahead of time.

Ingredients
- 225g plain greek yoghurt (or coconut yoghurt)
- 240ml coconut milk (tinned)
- 50g chia seeds
- ½ lemon, juiced, zested + extra for garnish
- 125g Raspberries (or other berry of choice)
- 1 Tbsp maple syrup
Directions
Add all of the ingredients to a large bowl and mix very well until combined. Ensure the chia seeds are mixed in, and the berries are lightly mashed. Divide the mixture evenly between jars, making one jar per serving, and refrigerate for at least eight hours or overnight.
Serve with extra raspberries and lemon zest (optional). Enjoy!
