Cauliflower has long been considered a bland and uninspiring vegetable, often relegated to the side of the plate or clumsily hidden under layers of cheese sauce. It’s one of the tougher ones to get the kids to love, and so it can often go unused in the fridge until it needs to be tossed.

However, with a little creativity and some culinary know-how, this humble vegetable can easily become a family favourite. Here are some innovative and delicious ways to make cauliflower exciting and enjoyable for everyone.

1) Roasted Cauliflower with Spices

Roasting cauliflower is a simple yet effective way to bring out its natural sweetness and enhance its flavour. Toss cauliflower florets with olive oil, salt, pepper, and your favourite spices such as cumin, paprika, or turmeric. Spread them out on a baking tray and roast in a preheated oven at 200°C for about 25-30 minutes, until they are golden brown and crispy. Serve as a side dish or toss with a salad for a hearty meal.

  1. Cauliflower Rice

For a low-carb alternative to traditional rice, cauliflower rice is a fantastic option. Simply pulse cauliflower florets in a food processor until they resemble rice grains. Sauté the cauliflower rice in a pan with a bit of olive oil, garlic, and onions until tender. You can also add vegetables, herbs, and spices to create a flavourful and nutritious dish. Cauliflower rice is perfect as a base for stir-fries, curries, or even as a side for grilled meats.

  1. Cauliflower Pizza Crust

Pizza night can be both healthy and delicious with a cauliflower pizza crust. To make the crust, steam cauliflower florets until tender, then pulse in a food processor until finely chopped. Squeeze out any excess moisture using a clean kitchen towel. Mix the cauliflower with eggs, cheese, and your favourite herbs and spices. Press the mixture onto a baking sheet lined with parchment paper and bake at 220°C for about 15-20 minutes, until golden and firm. Add your favourite toppings and bake for an additional 10 minutes. This gluten-free alternative is sure to be a hit with the whole family.

  1. Cauliflower Buffalo Wings

For a fun and healthy twist on a classic snack, try making cauliflower buffalo wings. Cut cauliflower into bite-sized florets and coat them in a mixture of flour, water, and spices. Bake the florets at 220°C for about 20 minutes, until crispy. Toss the baked cauliflower in your favourite buffalo sauce and return to the oven for an additional 10 minutes. Serve with celery sticks and a side of blue cheese or ranch dressing for a delicious and guilt-free treat.

  1. Cauliflower Mac and Cheese

Mac and cheese is a beloved comfort food, and adding cauliflower to the mix not only boosts its nutritional value but also adds a delightful texture. Cook cauliflower florets until tender and blend them with milk, cheese, and a bit of butter to create a creamy sauce. Mix the sauce with cooked pasta and bake in the oven until bubbly and golden. This dish is a great way to sneak in some extra veggies while still enjoying a classic favourite.

  1. Cauliflower Tacos

Taco night can be made even more exciting with the addition of cauliflower. Roast cauliflower florets with olive oil, cumin, chilli powder, and garlic until tender and slightly charred. Serve the roasted cauliflower in warm tortillas with your favourite taco toppings such as avocado, salsa, and shredded lettuce. These vegetarian tacos are not only delicious but also packed with nutrients.

  1. Cauliflower Soup

A warm and comforting bowl of cauliflower soup is perfect for cooler evenings. Sauté onions, garlic, and celery in a pot until softened. Add cauliflower florets and vegetable broth, and simmer until the cauliflower is tender. Blend the soup until smooth and creamy, and season with salt, pepper, and a pinch of nutmeg. For an extra touch of indulgence, stir in a bit of cream or top with crispy bacon bits and fresh herbs.

  1. Cauliflower Steaks

For a hearty and satisfying meal, try making cauliflower steaks. Cut a large cauliflower head into thick slices and brush with olive oil, salt, pepper, and your favourite herbs. Grill or roast the cauliflower steaks until tender and caramelised. Serve with a side of mashed potatoes or a fresh salad for a delicious and filling dinner.

  1. Cauliflower Fritters

Cauliflower fritters are a fun and tasty way to enjoy this versatile vegetable. Grate cauliflower and mix with eggs, flour, cheese, and your favourite herbs and spices. Form the mixture into small patties and fry in a bit of oil until golden and crispy. Serve the fritters with a side of yoghurt or sour cream for dipping.

  1. Cauliflower Smoothies

For a surprising and nutritious addition to your morning smoothie, try adding a handful of cauliflower florets. Blend cauliflower with your favourite fruits, such as bananas, berries, and spinach, along with some yoghurt and a splash of milk or juice. The cauliflower adds a creamy texture and a boost of vitamins without altering the flavour of the smoothie.

As you can see, cauliflower is actually enormously versatile and every bit as capable of being the foundation of a meal as bread or rice is. Once you get creative with your Good & Fugly creations you’ll be in for a world of eating that is both healthier and tastier than many of the originals.
