An apple a day keeps the doctor away! Apples are a rich source of polyphenols, which are plant compounds that have immune modulating effects. Basically, the more apples you eat, the better equipped your immune system is to handle exposure to illness.
This delicious breakfast bake is perfect for the cooler months, can be made ahead of time and reheated, or just enjoyed cold – the stewed apples throughout make it taste like custard!
Heat oven to 170°C and rub a little butter or oil over a
rectangle baking dish
Make apple sauce: simmer chopped apples in a small pot with 2 tbsp of water for 10min or so until soft.
Meanwhile, whisk all other ingredients (except berries) together in a bowl before adding the apple sauce.
Gently stir through berries before pouring into baking dish
Bake for 30min until the centre is almost set (this is for a delicious chewy texture). If you wish the oatmeal to be a little more baked, cook for another 5min
Recipe Note
*For egg-free alternative– 1 tbsp chia seeds placed in 3 tbsp
water and allowed to sit for 5 min until it becomes a gel. This is
equivalent to 1 egg.
