Grated Broccoli Salad
1 small head of broccoli
1/2 tsp salt
Zest of 1 lemon or 2 tbsp chopped preserved lemon
Lemon juice, to taste
1/2 tsp sumac or ground allspice, cumin, or coriander
Ground black pepper, to taste
Olive oil, to taste
1 large handful of mint leaves
1 bunch of parsley, finely chopped
Finely chopped spring onions (scallions) or 1/2 thinly sliced red onion
1 finely diced tomato
1 thinly sliced chili
Coarsely grate a small head of broccoli into a large bowl.
Add 1/2 tsp salt to the grated broccoli and give it a gentle salty massage. Set aside.
Finely dice 1 cucumber and add it to the broccoli.
Add the finely grated zest of 1 lemon or 2 tbsp chopped preserved lemon, a big squeeze of lemon juice, and 1/2 tsp sumac or ground allspice, cumin, or coriander.
Give the salad a good crack of pepper and a drizzle of olive oil.
If you have any of the optional ingredients, add them to the salad as well – 1 large handful of mint leaves, 1 finely chopped bunch of parsley, finely chopped spring onions (scallions) or 1/2 thinly sliced red onion, 1 finely diced tomato, and 1 thinly sliced chili.
Serve the Grated Broccoli Salad with flatbreads, lamb koftas, or falafel. Enjoy!
