This vibrant salad is a celebration of summer flavours, combining sweet nectarines, juicy cherry tomatoes, and creamy mozzarella with a drizzle of honey vinaigrette. It’s fresh, light, and ready in just 10 minutes—perfect for a quick lunch or an elegant side dish.

Ingredients
- 2 tbsp Olive Oil
- 2 tsps White Wine Vinegar
- 1 tsp Honey
- Sea Salt & Black Pepper (to taste)
- 4 Nectarines (pit removed, sliced)
- 445g Cherry Tomatoes (halved)
- 140g Mozzarella Ball (torn into pieces)
- 10g Basil Leaves (sliced)
Directions
In a small bowl, whisk together the oil, vinegar, and honey. Season with salt and pepper.
Place the nectarine and tomatoes onto a serving dish and add the mozzarella. Pour the oil mixture over top and garnish with basil. Divide evenly between plates or bowls and enjoy!
