Ingredients

100g rolled oats

1 tbsp ground flaxseed

2 tsp ground cinnamon

1 tsp nutmeg

1½ tsp baking powder

70g pumpkin seeds

70g sunflower seeds

145g pitted dates (chopped)

1 egg, whisked

185g roast pumpkin (pureed)

85g honey

1 tbsp olive oil

70g carrot, grated
Directions
Preheat oven to 180°C and line a baking tray with baking paper.
Combine oats, flaxseeds, cinnamon, nutmeg, baking powder, pumpkin seeds, sunflower seeds and chopped dates together in a bowl. Mix well to combine.
Whisk egg in a separate bowl. Add pumpkin, honey, olive oil and grated carrot.
Add dry ingredients to wet and mix well until a dough-like consistency forms.
Form cookies with the dough and transfer to the baking sheet.
Place in the oven and bake for 30 to 40min depending on how crispy you like your cookies. Remove from oven and let cool. Enjoy!
