Turmeric & Lime Chicken With Mixed Veg

Ingredients
- 1 tsp Extra Virgin Olive Oil
- 300 g Chicken Breast (boneless, skinless, sliced)
- Sea Salt & Black Pepper (to taste)
- 180 grams Purple Cabbage (chopped)
- 1 Red capsicum (medium, chopped)
- 270 grams Asparagus (chopped)
- 1 tsp ground Turmeric
- ½ Lime (juiced)

2 stalks shallots (sliced)
Directions
Heat the oil in a pan over medium heat. Season the chicken all over with salt and pepper. Add the chicken to the pan, stir, and cook for about 12 to 15 minutes. Transfer the chicken to a plate and set aside.
In the same pan, add the cabbage, capsicum, and asparagus. Sauté for about 15 minutes or until browned and cooked through.
Add the cooked chicken to the pan along with the turmeric. Stir and cook for another five minutes until flavours blend well together. Remove from the heat and stir in the lime juice.
Top with schallots and divide evenly between plates. Enjoy!
