This week, we’re loving leeks! Perhaps one of the more unusual looking in the veggie family, leeks have plenty to offer. Rich in potassium, calcium, iron, magnesium and vitamin C, leeks are often called a superfood for a reason. On top of that, did you know you can use the whole leek?
The white and light green parts are delicious for many meals (like our soup below) but the green leaves can also be used to make stock, turned into pesto or pickled. You can also add the greens to your compost.
