Ingredients
2 cups wholemeal flour
2 tsp baking powder
1⁄2 tsp salt
2 eggs, whisked
1⁄2 cup milk of choice
1⁄4 cup maple syrup
1 tsp vanilla paste
1⁄4 cup olive oil
1⁄4 cup chia seeds, soaked in 4 tbsp water
1 tbsp orange zest
Juice of one large orange (approx. 1⁄2 cup)
1/3 cup dark choc chips
Directions
Heat oven to 180°C and rub butter or oil onto a 12-cup muffin tray
Add flour, baking powder and salt to a large bowl and stir until combined
In a separate bowl, combine wet ingredients before stirring through the flour mixture
Gently fold in the chocolate chips, then spoon portions into the muffin tray
Bake for 20min, or until skewer comes out clean
Allow to cool completely before transferring to an airtight container.

TIP: These muffins freeze well, so you can double the batch
and have some ready for another day!
