Ingredients
- 3 Bananas
- 1 egg
- 75g plain greek yoghurt
- 2 Tbsp olive oil
- 160g maple syrup
- 1 tsp vanilla extract
- ¼ tsp salt
- 240g plain wholemeal flour
- 120g dark choc chips
Directions
Preheat the oven to 175ºC. Line a muffin tray with liners or use a silicone muffin tray.
Add the banana, egg, yogurt, oil, maple syrup, and vanilla to a food processor. Mix well to combine.
Place the salt & flour in a mixing bowl and stir through the wet mixture until just combined. Gently fold in the chocolate chips. Do not over-mix.
Divide the batter evenly between muffin cups. Bake for 20 to 24 minutes or until firm to the touch. Transfer the muffins to a cooling rack to cool completely. Enjoy!
