Ingredients
600g boneless chicken thighs, chopped
1 medium head cauliflower, finely chopped
1 onion, diced
60g kale, leaves removed from stems & chopped
360ml tinned coconut milk
35g Nutritional yeast (optional)
1 garlic clove, crushed
1 tsp ground turmeric
1 tsp ground sage
Salt & pepper to taste
Directions
Preheat the oven to 175ºC. Grease a casserole dish.
Add all the ingredients to a large bowl, and mix well to combine. Add the contents of the bowl to the prepared casserole dish.
Bake in the oven for 50 to 55 minutes. Let cool for 10 minutes before serving. Enjoy!
