Garlicky Parsley Zucchini
2-3 tbsp olive oil
4-6 garlic cloves, finely chopped
1/2 tsp fennel seeds
2-3 large handfuls of parsley, finely chopped
Lemon juice, to taste
Salt, to taste
Ground black pepper, to taste
Cut the 2-3 zucchini into cubes.
Heat 2-3 tbsp of olive oil in a frying pan over medium heat.
Add the cubed zucchini to the pan and fry for 3-4 minutes.
Add the finely chopped garlic cloves, fennel seeds, and a big pinch of salt to the pan, then cook until the garlic smells delicious.
Once the zucchini has started to soften, add the finely chopped parsley and a squeeze of lemon juice to the pan.
Fry the mixture for another 30 seconds or so.
Top the dish with ground black pepper and serve. Enjoy your zucchini side dish!
