Ingredients
- 1 tsp extra virgin olive oil
- 200g green beans (trimmed, chopped)
- 40g schallots (thinly sliced)
- ½ tsp black pepper
- 6 eggs (whisked)
- 1 tomato, half and sliced
- 75g feta cheese
Directions
Preheat the oven to 200ºC. Heat the oil in a stainless steel or cast iron skillet. Add the green beans and shallots and sauté for three to four minutes. Season with black pepper.
Add the eggs to the pan and top with feta cheese. Stir gently to mix.
Arrange tomato slices on top before cooking in the oven for 12 to 15 minutes or until the eggs have set. Slice the frittata and enjoy.
