Ingredients

300g spiral pasta

1 small broccoli head, cut into florets

1 tbsp olive oil

450g chicken breast, diced

1 small leek, white & light green parts only, finely chopped

2 garlic cloves, crushed

1½ cup chicken (or vegetable) stock

100g cream cheese

50g cheddar cheese, grated

Salt & pepper to taste

Directions

Bring a large pot of pasta to a boil, and cook pasta until al dente. Add the broccoli florets to the pasta water for the last 2-3 minutes of cooking.
Meanwhile, heat olive oil in a deep pan and add diced chicken. Cook over medium heat until the chicken is just cooked & slightly golden (around 4min)
Add leek & garlic and cook for a further 2-3min.
Pour stock into the pan and add cream cheese, stirring until melted. Turn off heat.
Transfer the cooked pasta and broccoli to the pan and toss with the sauce.
Stir in the grated cheddar and adjust the seasoning.
Transfer the pasta to a baking dish and sprinkle with breadcrumbs.
Bake for 10-15 minutes or until the cheese has melted. Allow the pasta dish to cool for 5 minutes before serving.
