Ingredients

4 Celery stalks, sliced

400g tin Chickpeas (drained)

1 red onion, thinly sliced

15 Black olives, halved

3 Tbsp pumpkin seeds

1 handful of Parsley, chopped

¼ cup extra-virgin olive oil
-
¼ cup tahini
-
3 tablespoons lemon juice, to taste
-
2 teaspoons Dijon mustard
-
2 teaspoons maple syrup or honey
-
½ teaspoon fine sea salt
-
Freshly ground black pepper, to taste
-
2 tablespoons ice-cold water, more as needed
Mediterranean Celery Salad
Tahini Dressing
Directions
In a large bowl, combine celery, chickpeas, olives, red onion and parsley.
Make the dressing: In a small bowl, combine the olive oil, tahini, lemon juice, dijon mustard, maple syrup, salt & black pepper. Whisk until smooth. If too thick, add some ice-cold water to reach desired consistency.
Finish the salad: Pour the dressing over the celery chickpea salad, mix well and sprinkle pumpkin seeds on top.
Enjoy as a side to your choice of protein.
