Summer Strawberry Guacamole

Avocados originated in Mexico somewhere between 7,000 - 5,000BC, enjoyed in many cultures in salads, and as a dessert. Considered a ‘mood food’ because it is rich in Magnesium and anti-inflammatory fats for calming your nervous system. This dip is a delicious twist on a regular guacamole, with a perfect salty/sweet combination.

TIP: Guacamole can be frozen in serving sizes (in airtight container or snaplock bag) and enjoyed when needed, so your avocados don’t go off.

Ingredients

• 2 ripe avocados, peeled and seeded

• 1⁄2 tsp salt

• 1 tbsp lime juice

• 1⁄4 cup diced red onion

• 1 cup chopped strawberries (green leaves removed)

• 2 Tbsp chopped coriander

Directions

1. Place avocado flesh on a wooden chopping board and mash with the back of a fork

2. Add lime juice, salt, onion, strawberries and coriander

3. Adjust salt & lime juice to taste

4. Top with extra chopped strawberries and store covered in the fridge until required. Serve with corn chips.
