Also known as a courgette, the zucchini is technically a fruit! But it's neutral flavour lends itself to a variety of dishes, both savoury and sweet.
Zucchini is rich in plant compounds that stabilise blood sugar to protect against diabetes, and support eye health.
Combined with haloumi in these fritters, it makes for a light but satiating meal.
Zucchini and Haloumi Fritters

Ingredients

1 cup flour (recommend wholemeal)

1/3 cup milk
- 2 eggs
- ½ tsp ground cumin
- 1 corn on the cob, kernels cut from the cob
- 1 medium carrot, grated

½ cup haloumi or cheese of your choice

Olive oil for cooking
Directions
Whisk together flour, milk and eggs in a large bowl until smooth
Add cumin, corn, carrot, cheese and stir until combined
Heat olive oil in a large frying pan over a medium heat and spoon in portions of the batter in batches
Cook for approximately 2min either side, and rest on a paper towel while you cook the remaining batch
Serve with avocado salsa and/or a simple rocket and parmesan salad
