Zucchini Meatballs

Ingredients
- 2 Zucchini (small, grated)
- 1 carrot (medium, grated)
- 500 grams Extra Lean Beef Mince
- 2 Garlic (clove, minced)
- 1 tsp Cumin
- Sea Salt & Black Pepper (to taste)
- 2 tbsp Parsley (chopped, for garnish)
- ½ Lemon (juiced, for serving)
Directions
Preheat the oven to 200°C and line a baking sheet with parchment paper.
Use a clean kitchen towel or cheesecloth to squeeze out as much water as possible from the zucchinis.
In a bowl, add the beef, zucchini, carrot, garlic, cumin, salt, and pepper and mix well. Divide the mixture evenly into meatballs, approximately 6 cm in diameter. Place onto the baking sheet.
Cook in the oven for about 12 to 15 minutes or until cooked through.
Transfer the meatballs onto a serving plate. Top with parsley and squeeze lemon juice on top. Enjoy!
