Ingredients

6 eggs, whisked

1/2 cup Greek natural yoghurt

1/2 cup milk of choice

1/2 cup wholemeal self-raising flour

1/2 cup cheddar cheese, grated

2 zucchinis, grated & excess moisture squeezed out

1 brown onion, finely diced
-
1 medium carrot, grated
-
2 ripe tomatoes, sliced
-
2 slices ham off the bone, trimmed and diced (optional)
Directions
Preheat oven to 180°C and brush a rectangle baking dish with olive oil.
In a large mixing bowl, combine whisked eggs, yoghurt and milk. Add grated cheese, zucchini, onion, carrot and chopped ham. Fold in flour. Stir to combine.
Transfer to the prepared dish, top with tomato slices and bake for approx. 40-45 minutes (or until golden and a skewer can be removed from the centre clean).
Serve hot or cold with a fresh salad.
