Chargrilled Mediterranean Salad

Ingredients

2 ripe tomatoes, cut into thin wedges

1 zucchini, cut into fingers

1 red capsicum, cut into fingers

300g pumpkin, chopped into bite-sized cubes

180g salad greens (rocket, loose lettuce leaves, whatever you prefer)

180g haloumi, cut into 1cm thick slices

1⁄4 cup pumpkin and sunflower seeds

Salt & pepper to taste

2 tbsp olive oil

2 tbsp balsamic glaze
Directions
Heat oven to 200°C. Arrange pumpkin on a lined baking tray and toss in a drizzle of olive oil before baking for 15min
Meanwhile, toss tomatoes, zucchini and capsicum in a little olive oil before placing on a heated BBQ grill plate, or in the oven under the grill. Cook for a few minutes either size until softened slightly and nicely chargrilled
In the last 2 minutes of cooking vegetables, add the haloumi slices to the BBQ & cook for a 1min or so either side before removing and chopping into smaller pieces
Arrange salad greens in a large serving bowl or platter and top with your grilled vegetables, haloumi, mixed seeds and drizzle with olive oil and balsamic glaze
Enjoy immediately!
