Are those bananas are looking a little on the ripe side? Maybe a little too ripe to enjoy as you normally would? We have good news, those bananas are going to make the perfect addition to your banana bread!
A cafe classic, this is an easy recipe you can make at home. It's also perfect to cook with the kids! Trust us, they will love helping you mash up all those gooey, fabulous ingredients.
What you'll need:
- 2 large eggs
- 3-4 very ripe bananas
- 125g butter, softened
- 1 teaspoon vanilla extract
- 1 cup of brown sugar
- 2 cups of self-raising flour
- 1 teaspoon ground cinnamon
To make:
Preheat over to 180 degrees and grease a loaf tin. Mash bananas in a bowl. Add vanilla, cinnamon, sugar and eggs. You can either use an electric mixer or a wooden spoon. Add in your flour and fold in, finally adding the melted better until well-combined.
Pour the batter into the tin and bake for around 45minutes or until your bread is golden and cooked all the way through. Slice and serve warm with a little butter.
Want to give your banana bread a little extra pizazz? Add a second fruit to your mixture. We love blueberries and strawberries! Simply cut into small pieces and add to your mixture, giving it a good mix before you pour into the tin.
Don't forget you can also keep your banana bread in the freezer to give it a longer life!
